Boiled Spanich with Sesame Dressing

 (Hourensou no Goma-ae)





1 bunch spihach (hourensou)
1 sack hackberry mushroom (enoki)
15g white sesame seeds (shiro-goma)
sugar (satou)
soy souce (shouyu) enoki

1. Wash spinach thoroughly, especially the stems, and boil in ample water lightly salted until just to be tender. Then rinse in cold water.
2. Squeeze water from spinaach, and cut in 1 inchi length.
3. Roast sesame seeds until sputter, and grind in a mortar to be half ground.
4. Add sugar, light soy sauce to sesami and mix.
5. Add spinach.
