Dressed Eggplant with Sesame Seeds

     (Nasu no Goma-ae)




5 eggplant (nasu)
3 tbsp sesame seeds (goma)
powdered Japanese pepper (kona-zanshou)
1 tbsp sugar (satou)
2 tsp soy sauce (shouyu) nasu kona-zanshou


1. Cut each eggplant into halves lengthwise and boil. Then drain off the water.
2. Cut the boiled eggplant into 5mm thick semicircular slices and squeeze.
3. Roast sesame until they sputter and grind in a mortar until to be half ground. Add sugar and soy sauce, then mix. Sprinkle powdered Japanese pepper.
