Vinegared Dried DAIKON Radish Shaving

 (Sengiri Daikon no Su-no-mono)




40g dried daikon radish shaving (kiriboshi)
1/3 carrot (ninjin)
20g dried small fry (chirimen-jako)
1 bunch Japanese parsley (seri)
3/5cup vinegar (su) kiriboshi chirimen-jako
3 tbsp sugar (satou)
1/2 tbsp soy sauce (shouyu)

1. Boil the dried daikon radish shaving quickly, wash throughly, cut into long strips and squeeze.
2. Soak the dried small fry in vinegar.
3. Wash the carrot and cut into match sticks. Boil in hot water and drain.
4. Wash the Japanese parsely, cut into 3cm long pieces, boil and drain.
5. Put vinegar, sugar and soy sauce in a bowl and mix. Add the daikon shaving, carrot, small fry and Japanese parsely, and combine.
