Burdock Root Dressed with Vinegared Sesame

2 burdock root (gobou) |

1/2 cup kelp soup (dashi) |
|
|
1 tbsp light soy sauce (usukuchi) |
|
|
1/2 tbsp sugar (satou) |
|
|
1/2 tbsp vinegar (su) |

4 tbsp sesame (goma) |

1 tbsp sugar (satou) |

1/2 tbsp vinegar (su) |

1/2 tbsp soy sauce (shouyu) |

|
|
1. Wash burdock root with kitchen brush and scrape the skin with the back
edge of a kitchen knife.
2. Boil burdock root with vinegar until slightly soft.
3. Boil burdock root with kelp soup, sugar and light soy sauce.
4. Roast sesame until they sputter and grind in a mortar until half-ground.
5. Add sugar, vinegar and soy sauce to sesami.
6. Dress burdock root with sesame dressing.
