Vinegared Cucumber and Octopus

(Kyuuri to Tako no Su-no-mono)




3 cucumbers (kyuuri)
1 pack boiled octopus (yude-dako)
3 tbsp vinegar (su)
3 tbsp sugar (satou)
2 tsp light soy sauce (usukuchi) yude-dako
a pinch of salt (shio)

1. Cut cucumbers into 5mm thick round slices.
2. Put salt on sliced cucumber and squeeze.
3. Wash cucumber to remove exces salt.
4. Cut ocutopus into thin pieces.
5. Put vinegar, sugar and light soy sauce in a bowl and mix.
6. Dress cucumber and octopus with vinegar dressing.

Serves 4
