Boiled Green Peas, Jade Style

  (Hisui Mame)





300g green peas in the pods (endou-mame)
2 cup bonito and kelp soup (dashi)
2 tsp potato starch (katakuri-ko)
1 tsp light soy sauce (usukuchi)
1 tsp salt (shio) katakuri-ko
1 tsp mirin

1. Shell green peas and wash. Put green peas in boiling water with salt until hard-boiled, and drain.
2. Simmer green peas with bonito and kelp soup until to be soft. Add light soy sauce, salt and mirin.
3. Add water to popato starch and stir. Add starch-water to the pan stiring to thicken.

Serves 4
