Simmered Black Soybeans

5 cup black soybeans (kuro-mame)

3 cup sugar (satou) |
|
|
4 tbsp light soy sauce (usukuchi) |
|
|
1 tsp salt (shio) |
|
|
1 tbsp baking soda (juusou) |

|
|
1. Wash the black soybeans and drain.
2. Pour 12 cup water in a thick pot and bring to a boil. Add sugar, light
soy sauce, salt and baking soda, and boil briefly until dissolve.
3. Add black soybeans and keep for a night as they are.
4. Next day, simmer the black soybeans again over low heat until to be
soft watching the liquid always cover the beans. Be careful not to open
the lid too much.
