Simmered Rockfish

   (Mebaru no Nitsuke)





4 rockfish (mebaru)
1 cup water (mizu)
1/2 cup sake
2 tbsp sugar (satou)
1/3 cup mirin kinome
2 tbsp soy sauce (shouyu)
2 tbsp light soy sauce (usukuchi)
4 young stems of Japanese pepper (kinome)

1. Scale the rockfish, remove gills, slit belly and remove entrails(You can ask for this to be done at the fish store.). Wash well with cold water.
2. Place the rockfish in a bowl and pour enough hot water to cover the fish. When the fish changes its color to light white, drain and rinse surface and inside thoroughly.
3. Simmer the fish in water with sake, sugar, mirin and soy sauce for 5 or 6 minutes covering with a small lid.
4. Pour the simmering sauce over the fish and serve in individual bowl. Place Japanese pepper on top.
