Simmered Eggplant

   (Nasu no Nitsuke)





8 eggplant (nasu)
2 cup bonito soup (dashi)
1 tbsp sake
    1
1 or 1  tbsp soy sauce (shouyu)

1 tbsp sugar (satou) nasu
1 tbsp mirin

1. Wash eggplant and run a knife on the skin, cross-score the skin surface at 1cm intervals.
2. Stir-fry eggplants, rolling them.
3. Add bonito soup, sake, sugar, soy sauce and mirin, and simmer.

Serves 4
