Simmered Dried DAIKON Radish Shaving

   (Sengiri no Nituke)




1 pack dried daikon radish shavings (kiriboshi)
1 carrot (ninjin)
1 piece fried bean curd (aburaage)
bonito or kelp soup (dashi)
sake kiriboshi aburaage
sugar (satou)
soy sauce(shouyu)
mirin
salad oil (sarada-yu)

1. Wash the dried daikon radish shavings in cold water by rubbing between hands. Soak in cold water for 10 minutes. When it becomes soft, squeeze water out.
2. Peal carrot and cut into thin rectangular pieces.
3. Dip fried bean curd in hot water to remove exces oil, and cut into thin strips.
4. Heat salad oil in a pan, add dried daikon radish, carrot and fried bean curd. Fry briefly.
5. Add bonito or kelp soup, sugar, sake, mirin and soy sauce.
