Simmered Bracken

  (Warabi no Nitsuke)




bracken (warabi)
fried bean curd (aburaage)
bonito and kelp soup (dashi)
sake
sugar (satou) warabi aburaage
soy sauce (shouyu)
mirin
sodium bicarbonate powder (juusou) or ash (hai)

1. Wash and clean bracken throuly.
2. Place bracken thin and flat in a plate. Spatter sodium bicarbonate powder or ash over bracken.
3. Pour enough hot water to just cover bracken and leave it for more than 12 hours. The water will become dark.
4. Wash bracken throuly and drain. Cut into 5cm long pieces.
5. Dip fried bean curd in hot water to remove excess oil, and cut into thin strips.
6. Add sake, sugar, soy sauce and mirin to the bonito soup, and bring to a boil. Add fried bean curd, and bring to a boil again. Add bracken and boil briefly.
