Simmered Royal Fern and Fried Bean Curd

 (Zemmai to O-age no Nitsuke)




1 pack boiled royal fern (zemmai)
1 sheet fried bean curd (aburaage)

1  cup bonito and kelp soup (dashi)

3 tbsp sake
2 tbsp sugar (satou) zemmai abuaage
3 tbsp soy sauce (shouyu)
1 tbsp mirin
sesame oil

1. Wash the royal fern and drain. Remove the stiff of royal fern and cut into 8cm long pieces.
2. Dip fried been curd in hot water. Cut the fried bean curd in halves lengthwise then cut into 1cm width rectangles.
3. Heat the sesame oil in a pan and fry the royal fern and fried bean curd. Add bonito and kelp soup, sake, sugar, soy sauce and mirin, and simmer until the juice has almost gone. Dish up in individual bowls.
