Grilled Millet Wheet Gluten Coated with MISO

 (Awa-fu no Miso Dengaku)





2 cakes millet wheat gluten (awa-fu)
A 100g red miso (aka-miso)
100g white miso (shiro-miso)
120g sugar (satou)
3 tbsp sake awa-fu
2 tbsp mirin
1 egg yolk (kimi)

1. Mix the seasonings shown A in a pan. Place the pan over low heat and cook until the mixture becomes thick liquid.
2. Cut each millet wheat gluten into 6 portions.
3. Grill the millet wheat gluten using a toaster oven until top and bottom sides turn brown.
4. Coat the top side of millet wheat gluten with the miso mixture and grill again.
