Glossily Grilled Yellowtail
(Buri no Teri-yaki)

1 tbsp soy sauce (shouyu) |

|
1. Soak the yellowtail fillets in sake and soy sauce for 10 minutes.
2. Heat the oil in a flying pan. Fry the yellowtail fillets upper side
first, and when fillets change to brown, turn them over. Cover the pan
and keep on frying over low heat.
3. Mix sugar, soy sauce and mirin to make teriyaki sauce.
4. Remove excess oil in frying pan with towel paper. Pour the teriyaki sauce into the pan and simmer so that the sauce coat the fish throughly.
