Sweet Drink Made from SAKE Lees

  (Amazake)




200g sake lees (sakekasu)
50g sugar (satou)
ginger (tsuchi-shouga)
sakekasu tsuchi shouga


1. Tear the sake lees in small pieces.
2. Peel the ginger and grate.
3. Place the sake lees, sugar and 5 cups water in a pan and bring to a boil over medium heat. When it brought to a boil, turn the heat to low and cook for 10 minutes.
4. Then liquefy in the blender for 1 minute.
5. Cook over medium heat again and skim off the foam.
6. Pour into a teacup and put grated ginger on top.

Serves 4
