Candied Sweet Potato

   (Daigaku Imo)





500g sweet potato (satsuma imo)
50g sugar (satou)
1 tbsp soy sauce (shouyu)
1 tsp vinegar (su)
black sesame seeds (kuro-goma)
canola oil

1. Wash the sweet potato and peel.
2. Cut the sweet potato diagonally, rolling. Soak in water for removing harshness, then wipe the sweet potato with paper towel.
3. Add sugar, soy sauce and vinegar to ...g water in a pan and bring to a boil.
4. Deep-fry the sweet potato in 170゚C oil taking enough time until they turn to light brown and cryspy.
5. Add deep-fried sweet potato to the pan and mix. Sprinkle black sesame seeds.
6. Dish up the sweet potato on a plate covered with cooking paper.
