Strawberry Flavored Gelatin Cake Made of Agar-agar and Egg Whites

320g strawberry (ichigo) |

4g powdered agar-agar (kona kanten) |
|
|
90g sugar (satou) |
|
|
3 egg whites (rampaku) |
|
|
2 cups water (mizu) |
|
|
1 tbsp lemon juice (remon jiru) |
|

|
1. Mush the strawberry.
2. Pour water in a pan and add agar-agar. Boil the pan stiring with wooden
ladle. When it brought to a boil, turn the heat down and boil for a few
minutes. Add sugar and dissolve.
3. Then turn off the heat, add mushed strawberry and lemon juice and mix.
4. Beat egg white until stiff and pour boiled agar-agar stated above little
by little stiring with ladle.
5. Pour agar-agar into moistened gelatin mold and coagulate in a refrigerator
after it cooled down.
The ingredients shown are for a mold 17cm length × 14cm width × 5cm depth.
