1. Lay out a damp towel in the mold and steam.
2. Place wheat flour, rice flour and sugar in a bowl and mix. Pour 420cc luke-warm water in the bowl, and mix until to be smooth.
3. Pour the dough into the mold setting aside 100cc. Steam the dough over
high heat for 20 minutes.
4. Take the mold out and suck up moisture from the surface. Sprinkle sweetend
adzuki red-beans and pour the dough reserved. Then steam over high heat
for 15 minutes.
5. Turn the steamed dough over bamboo rolling mat, take the towel off and
keep for a while to be cool. Turn the June Cake adzuki side up and cut
into triangles.
