Sweet Soup of Adzuki Red-beans and Rice Cake

   (Zenzai)




1 cup adzuki red-beans
    1
1 or 1  cup sugar (satou)
    2
a pinch of salt (shio)
soy sauce (shouyu)
2 or more rice cakes (mochi) adzuki mochi
 

1. Soak well rinced adzuki red beans in ample water for 4 or 5 hours.
2. Bring the adzuki red-beans and water to a boil, and drain in a sieve. Repeat this work 3 or 4 times.
3. Transfer adzuki red-beans to pot, add 3 or 4 times as much water as adzuki red-beans, and boil again until to be tender. Add water so the liquid always cover beans while cooking.
4. Add sugar and mix well. Add a pinch of salt and a little soy sauce.
5. To finish, put a toasted rice cake to serving bowls and pour hot been soup over.

Serves 2 or 3
